Chardon Macaron at Cardo

When the Tabourel family moved to Scotland over 25 years ago, they could not come across a perfectly made macaron, one of their favourite delicacies. In 2013 they decided that instead of continuing their search they would start to produce their own.  

So why Chardon? Well, the name Chardon translates to Thistle. They wanted to dedicate their macarons to the wonderful country they call home, and what is more fitting than the French name for the beautiful Flower of Scotland.

Baking is a passion for the Cardo team. Their wood fired clay oven doesn’t just create the magical Cardo pizzas, but also bakes a selection of delicious sourdough loaves.

At Cardo Bakery, they use French Appalachian Flour with no additives, to bake their sourdough loaf. Their bakery products, including the fabulous macarons, are all available in their restaurant next door too.
